Gluten Free Almond Flour Oatmeal Chocolate Chip Cookies

Makes about 2 1/2 dozen

Ingredients

  • 2 cups rolled oats
  • 1 cup Barney Bakery Almond Flour
  • 1/2 cup coconut flakes
  • 2 tsp cinnamon
  • 1/2 tsp sea salt
  • 3/4 cup maple syrup
  • 1/4 cup coconut oil (melted)
  • 1 tsp vanilla extract
  • 3/4 cup semi-sweet or dark chocolate chips
  • 3/4 cup toasted walnuts, chopped (optional)

Directions

  1. Preheat oven to 350 degrees
  2. Combine all dry ingredients (minus the chocolate chips & walnuts) in a bowl and mix.
  3. Combine all wet ingredients in a bowl and whisk together.
  4. Add dry ingredients to wet ingredients, mix well.
  5. Stir in chocolate chips and walnuts.
  6. Use a cookie scoop or spoon onto a parchment lined cookie sheet. Flatten cookies slightly.
  7. Bake about 15 minutes or until golden brown. Let cool 10 minutes. Enjoy!
