Vegan Peanut Butter Banana Bread

Ingredients

  • 1 1/2 cups flour
  • 1 tsp. ground cinnamon
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 cups mashed banana, about 3 medium bananas
  • 1/2 cup pure maple syrup
  • 2 tsp. vanilla extract
  • 1/3 cup Barney Butter Bare Smooth Peanut Butter
  • Desired mix-ins such as nuts, chocolate chips, raisins, etc.

Directions

  1. Preheat the oven to 350 °F and lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
  3. In a separate bowl, add the mashed banana, maple syrup, vanilla, and Barney Butter peanut butter. Stir together until smooth.
  4. Add the dry ingredients to the bowl with the wet ingredients and fold everything together until a batter forms. Stir in any desired mix-ins such as chocolate chips, chopped nuts, or dried fruit. Transfer the batter to the loaf pan.
  5. Bake in the oven for about 45 minutes, or until golden brown on edges. Let cool completely before serving.
