Gluten-Free Lemon Almond Butter Bars

Ingredients

  • 1 cup Barney Butter Smooth or Bare Smooth Almond Butter
  • 1/4 cup coconut flour
  • 1/4 cup brown sugar
  • Juice and zest of 1 lemon
  • 1 egg
  • 1 teaspoon vanilla bean paste
  • 1 teaspoon baking soda
 

Directions

  1. Combine all of the ingredients until smooth.
  2. Roll out 1 inch balls of dough, place them on a cookie sheet, and press them into circular patties.
  3. Bake at 350F for 9 minutes (until golden brown on the bottom), and let them cool on a wire rack.
