What is palm oil and why is it an ingredient in Barney Butter?
Palm oil is a non-hydrogenated, healthy alternative for preventing oil separation in foods. Palm oil comes from the fruit of the palm and has a balanced fatty acid composition and is cholesterol free. It is easily digested, absorbed, and available for energy by the body unlike it's synthetic counterpart: partially hydrogenated oil, or trans fat.

Isn’t palm oil bad for you?
Palm oil is not to be confused with palm kernel oil, which is high in saturated fat and therefore unhealthy. Palm oil comes from the fruit of the palm and actually promotes health by providing lipid antioxidants and fatty acids. The alternative for a stabilized effect is ‘partially hydrogenated vegetable oil’, a synthetically saturated monounsaturated fat – or “trans fat”. Most commercial peanut butters contain partially hydrogenated fat, which is almost totally saturated in order to prevent oil separation. We prefer natural oils to synthetic hydrogenated oil.

Barney Butter can remain opened or unopened in a cool, dry place for the length of the shelf life with no refrigeration necessary. You may notice some flavor loss after 3 months if you have an opened and unused jar, just as you would with an opened package of almonds. In this case you may want to refrigerate Barney Butter, however, Barney Butter will not spoil.

Barney Butter can be safely stored without refrigeration because of a small amount of natural stabilizer which prevents oil separation and the inevitable rancidity from oxidation. In addition, the low level of moisture in Barney Butter cannot support bacteria growth or even drought-tolerant molds.
